I love mash because I can change which roots I add to make it taste differently. Beside that I can add different herbs.
I use most often carrots, parsnips, parsley root and sweet potatoes.
2-4 parsnips/parsley root
1 big sweet potato
2 dl water from boiling the roots (almost 1 cup water)
1 tsp Himalaya salt
1-2 dl olive oil (almost 1/2 – 1 cup oil)
When I’m nasty I use a little butter too.
Peel the roots and the sweet potato. Cut them up in 2-3 cm pieces. Cover them with water and add the salt. Get i boiling and let it simmer 15-20 cm.
When they are done pour the water from the roots except the 2 dl. Take the hand blender and mash it all. Add the olive oil and blend again. Taste on it and if needed add a little salt.
