I love mango but have to be careful because if they aren’t ripped enough I react on them but his salad is worth the risk ;-D
1/2 red onion
4-5 tablespoons of parsley
1 red bell pepper
1 romano lettuce
100 g spinach or other non-bitter lettuce
Peel the mango and cut the meat of the stone and cut the meat into small pieces.
Peel the onion and cut into small squares.
Wash, dry and clip it into small pieces.
Wash the bell pepper and remove the core. Cut it into small pieces.
Mix it all well.
Wash the lettuce well and get all the water out. Cut it into pieces that are too big.
Mix it with the rest and serve.
It can be served with a homemade paleo mayo with extra lemon added.
I use this salad all-round.
