Banana Pancakes (3-4 pancakes)
Ingredients (all organic):
2 tablespoons oats (gluten free)
1/2 vanilla pod or 1 teaspoon cardamom
2 tablespoons coconut oil
Mash the bananas with the oats. Put the eggs in and whip until all is mixed. Split the vanilla pod and scrape the beans out with the backside of a knife. Mix it in.
Warm up a frying pan over low heat and melt half a spoon coconut oil. Pour a layer of mix on the pan and let i become solid before flipping it. When it’s nicely golden it’s so ready for at set of teeth.
I make a bunch for 2 days and bring them to work for a snack between meals.
